Egg Drop Soup for the Soul

A Chinese staple for warming the body as well as the soul! Egg drop soup is a healthy and delicious way to treat the immune system while improving the mood. This fast and healthy recipe will keep you warm and cozy all Autumn!  Ingredients: 4 cups low-sodium chicken broth  1 tablespoon reduced-sodium soy sauce 1/4 teaspoon ground ginger 2 tablespoons arrowroot 2 tablespoons water 2 large eggs, beaten 1/4 teaspoon kosher salt (more to taste) 1/4 teaspoon sesame oil (see note) 1/4 cup sliced green onions Directions: In a pot, bring the chicken broth, soy sauce, and ground ginger to a boil.  In a small bowl, combine the arrowroot and water. Stir into the boiling broth until thickened. Reduce heat to a simmer. Slowly drizzle the eggs into the soup while gently stirring in a circle in the same direction. Remove from heat and add the salt, sesame oil, and green onions. Add more salt to taste and serve. 

*add more arrowroot to create a thicker consistency.  In Chinese Medicine green onions are considered an essential herb (food therapy) to jumpstart the immune system and kick the common cold to the curb.
